Instructions:
For the Cake:
Preheat your oven to 350°F (180°C).
Grease and flour three 8-inch round cake pans.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
Set aside.
In a large mixing bowl, cream together the softened butter and sugar until light and fluffy using an electric mixer.
Add the eggs one at a time, beating well after each addition.
Mix in the vanilla extract and coconut extract.
Gradually add the dry ingredients to the wet ingredients, alternating with the coconut milk.
Begin and end with the dry ingredients.
Mix until just combined.
Fold in the shredded coconut using a spatula.
Divide the batter evenly among the prepared cake pans.
Smooth the tops with a spatula.
Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
For the Coconut Cream Cheese Frosting:
In a large bowl, beat the cream cheese and butter until smooth and creamy.
Add the powdered sugar, vanilla extract, and coconut extract.

Assembly:
Once the cakes are completely cooled, place one layer on a serving plate.
Spread a layer of coconut cream cheese frosting over the top.
Place the second cake layer on top and repeat the process.
Add the final cake layer and frost the top and sides of the entire cake with the remaining coconut cream cheese frosting.
Sprinkle shredded coconut over the top of the cake for decoration.
